Huevos con Choizo

Huevos con Chorizo has been a beloved staple in my family for years. The enticing aroma of sizzling chorizo on the stovetop is just as comforting as the scent of fresh baked goods or sizzling bacon in the frying pan. Our preferred brand for chorizo is Chorizo De San Manuel, available in both pork and beef varieties. This brand boasts simple, quality ingredients that impart a wonderful flavor. Its origins trace back to the 14th century to Tunisia, North Africa, and it journeyed to Israel through North African Jewish immigrants during the 1950s and 60s. By the 1990s, this culinary creation had firmly established itself on brunch menus across the globe, although its appeal extends beyond morning hours. The method of blooming the olive oil with tomato paste and spices plays a pivotal role in elevating the dish's flavors.

Chocolate Avocado Mousse

I prepared this dessert for Michelle Obama and her team in 2019, when I was working at Google in the Teaching Kitchen, when she launched her book ‘Becoming”. This dessert is fantastic and decadent. The base is a ripe avocado. But what hides the flavor of the dessert is the rich Dutch chocolate powder, the citrusy and tangy taste of the orange juice and zest, and the sweetness from the maple syrup. I added a dollop of coconut whipped cream, a sprinkle of carob nibs, and a small mint leaf for freshness. The best thing about this dessert is that it was 100% plant-forward.
