Ingredients:

  • 1 lb. trimmed asparagus
  • 2 tablespoons butter
  • 1/2 cup Italian bread crumbs or panko
  • 1/4 teaspoon Kosher salt
  • 1/4 cup minced parsley
  • 1 tablespoon olive oil
  • 1/2 cup heavy cream
  • 1 cup grated Parmesan
  • Zest of 1 lemon

Recipe:

  1. In a small skillet over medium-high heat, melt the butter. Add the bread crumbs and 1/8 teaspoon of salt. Cook, stirring often, until toasted (2 to 3 minutes). Stir in parsley and set aside.
  2. Place the heavy cream in a small skillet. Bring it to a gentle simmer over medium heat, stirring occasionally. Add Parmesan, 1/4 cup at a time, stirring until completely melted and smooth.
  3. Preheat the oven to high broil with the rack in the middle position. Place the trimmed asparagus on a rimmed baking sheet, drizzle with olive oil, and toss to coat. Sprinkle with the remaining salt and broil until the asparagus is tender-crisp (about 5 minutes).
  4. Arrange the broiled asparagus on a platter. Spoon the cheese sauce over the asparagus and sprinkle with the bread crumb mixture and lemon zest.
