Legend has it that in the frostbitten winters of 16th century Ancient China, a compassionate medicine man came upon his villagers suffering from malnutrition and frostbite, particularly around their ears. Stirred by their plight, he set out to seek medicinal herbs, combined it with lamb, and tucked this healing mixture into a dough pocket. After consuming these medicinal dumplings with a hearty stock, the villagers' health improved and their frostbitten ears healed.
These dumplings that resembled tender ears were the precursors to our beloved potstickers. But how did the potsticker get its name and signature golden bottom? In a happy culinary accident, a cook forgot to lower the temperature of boiling water while cooking dumplings. As the water evaporated, the dumplings sank and browned at the bottom of the pot. And voila, the potsticker was born, its doughy top and crispy bottom symbolizing the delightful contrast of textures in every bite.
When I prepare potstickers, I reach for a mushroom and vegetable filling. A melody of textures and flavors, these potstickers are a true delight when accompanied by a tangy-sweet chili sauce. What's more, they can be prepared ahead of time and stored in the freezer for up to six months, ready to be cooked straight from the freezer using a bamboo steamer, boiling pot of water, or sauté pan.
