Chocolate Cupcakes with Cream Cheese Frosting

This particular recipe holds a special place in my heart, as it unfailingly produces cupcakes of perfection. he secret to achieving the utmost moistness lies in the addition of boiling water. Incorporating boiling water into the batter accomplishes two crucial tasks: first, it effectively eliminates lumps in the cocoa powder and dissolves the sugar seamlessly. Additionally, the boiling water activates the leavening agents, namely baking powder and baking soda, guaranteeing a delightfully fluffy cupcake.

Chicken Meatball Soup

I love making Chicken Meatball soup during the winter season. I especially love using  ground chicken meatballs for their easy, hands-off preparation and flawless oven cooking—no need for flipping or stirring. This versatile recipe also suits other ground meats such as turkey or bison. My version omits the egg and breadcrumbs. I have discovered that organic, pastured chicken boasts its own delightful flavor, and with minimal additions like fresh parsley, Italian seasoning and gluten-free breadcrumbs, you'll hardly miss the traditional version.

Asparagus with Parmesan Herbed Cheese Sauce.

This Asparagus with Parmesan Herbed Cheese Sauce makes for a quick and delightful side dish suitable for any dinner occasion. Its preparation is effortlessly swift, with the only significant task being the trimming of the asparagus. Utilizing a vegetable peeler for the stalks and a knife for the ends, take care to be gentle and avoid breaking the tips, as they contribute to the vegetable's beautiful presentation. "Thai Fresh: The Cookbook"

My admiration for Thai cuisine knows no bounds, with a special fondness for Pad Thai. Living in close proximity to the exceptional Thai restaurant, Thai Fresh, in South Austin has been a true privilege. My daughter and I frequently indulge in Thai Fresh's happy hour, savoring cups of the creamy, sweet, and spicy Tom Kha alongside a shared plate of Pad Thai.
